Homemade BBQ sauce is one of those things that sounds complicated until you make it yourself. A few pantry staples, one saucepan, and about 15 minutes later, you've got a sauce that's richer, fresher, and far more memorable than anything from a bottle.
The vanilla might seem unexpected at first, but it works surprisingly well here. It doesn't make the sauce sweet or dessert-like. Instead, it softens the sharp edges of the vinegar, rounds out the smokiness, and adds a subtle depth that keeps you coming back for another bite.
Ingredients
- 1 cup ketchup
- 1/4 cup brown sugar
- 2 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/2 tsp pure vanilla extract
- Optional: pinch of cayenne pepper
Instructions
Add all ingredients to a small saucepan and whisk until smooth and fully combined.
Place over medium heat and bring the mixture to a gentle simmer, stirring occasionally to prevent sticking. As the sauce warms, the brown sugar will dissolve, and the flavours will begin to come together.
Let the sauce simmer for 10 to 15 minutes, stirring every few minutes, until slightly thickened. Taste and adjust as needed. Add a little extra brown sugar for sweetness, a pinch more smoked paprika for smokiness, or cayenne if you'd like some heat.
Remove from the heat and allow the sauce to cool for a few minutes before serving. The flavors continue to develop as it rests.
Serving Ideas
This sauce is right at home brushed onto grilled chicken, slathered over ribs, spooned onto pulled pork, or spread on a burger fresh off the grill. It also works surprisingly well as a glaze for roasted vegetables.
